Ingredients
  

1/2 cup balsamic vinegar

1/3 cup extra virgin olive oil

2 tablespoons pure maple syrup

1 teaspoon Dijon mustard

1 clove garlic, minced

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

Salt and pepper to taste

Optional: 1 tablespoon finely chopped fresh rosemary or thyme

Instructions
 

In a medium mixing bowl, whisk together the balsamic vinegar and Dijon mustard until well combined.

    Slowly drizzle in the extra virgin olive oil while continuously whisking to emulsify the mixture.

      Add the maple syrup, minced garlic, ground cinnamon, nutmeg, and a pinch of salt and pepper. Whisk until all ingredients are well incorporated.

        For added depth of flavor, stir in the finely chopped fresh herbs if using.

          Taste the vinaigrette and adjust the seasonings as necessary, adding more maple syrup for sweetness or extra vinegar for tang.

            Transfer the vinaigrette to a glass jar or an airtight container. Let it sit for at least 30 minutes before serving to allow the flavors to meld.

              Shake well before serving. Store in the refrigerator for up to a week.
