1 cup diced bell peppers (red, green, or yellow)

½ cup diced onions

Taco Shells:

12 small corn or flour tortillas (soft or crunchy)

Toppings:

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Mexican blend)

½ cup sour cream

½ cup guacamole

½ cup salsa (mild or spicy)

¼ cup sliced jalapeños (optional)

Fresh cilantro for garnish (optional)

Lime wedges for serving

Cook the Filling: In a large skillet, heat olive oil over medium heat. Add the diced onions and bell peppers. Sauté for about 3-4 minutes until they are softened. Add the ground beef or turkey, breaking it up with a spatula. Cook until browned, about 5-7 minutes.

    Season the Meat: Drain any excess grease from the skillet. Add the taco seasoning (or homemade blend) along with ½ cup of water. Stir to combine and let simmer for about 5 minutes, allowing the flavors to meld together.

      Prepare the Tortillas: While the meat is cooking, warm the tortillas. If using corn tortillas, you can lightly fry them in a small skillet over medium heat for 10-15 seconds on each side until pliable. For flour tortillas, you can microwave them wrapped in a damp paper towel for about 20 seconds, or heat them on a dry skillet for a few seconds on each side.
