Ingredients

1 cup unsalted butter, softened

¾ cup powdered sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

½ cup cornstarch

¼ teaspoon salt

½ cup maraschino cherries, chopped, drained, and patted dry

Optional: additional cherries for decoration

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and powdered sugar until it’s light and fluffy, about 3-4 minutes.

Add Vanilla: Mix in the vanilla extract until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.

Incorporate Cherries: Gently fold in the chopped maraschino cherries until evenly distributed throughout the dough.

Shape Cookies: Use a small cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with the palm of your hand. For an extra festive touch, place a whole cherry on the top of each cookie.

Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden but the centers remain soft.

Cool: Remove from the oven and allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Once cooled, serve these delightful shortbread cookies at your festive gatherings or package them as sweet gifts!
