4 medium zucchinis (zoodles)

2 cups cherry tomatoes, halved

1 cup crumbled feta cheese

1/4 cup red onion, thinly sliced

1/4 cup Kalamata olives, pitted and halved

1/4 cup fresh basil, chopped

2 tablespoons extra-virgin olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Prepare the Zoodles: Using a spiralizer, create zoodles from the zucchinis. If you don't have a spiralizer, you can use a vegetable peeler to create ribbon-like strips. Place the zoodles in a colander, sprinkle with a little salt, and let them sit for about 10 minutes to draw out excess moisture.

    Mix the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, sliced red onion, Kalamata olives, and chopped basil. Toss gently so that the ingredients are evenly distributed.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust the seasoning to taste.

        Combine Ingredients: After 10 minutes, pat the zoodles dry with a paper towel to remove excess moisture. Add the zoodles to the bowl with the tomato mixture.

          Add Feta: Gently fold in the crumbled feta cheese and the dressing. Be careful not to mush the feta; you want to keep some chunky pieces for texture.

            Serve: Taste and adjust the seasoning if needed. Serve the salad fresh or let it chill in the refrigerator for about 15-20 minutes to let the flavors meld together.
