Ingredients

12 oz fettuccine

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 cup heavy cream

1 cup cherry tomatoes, halved

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Cook the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Season the Shrimp: In a medium bowl, combine the shrimp with the Cajun seasoning, tossing to ensure even coating.

Sauté Vegetables: In a large skillet over medium heat, heat the olive oil. Add the onions and garlic, sautéing until translucent (about 3-4 minutes). Add the diced red and green bell peppers and cook for an additional 3-4 minutes until softened.

Cook the Shrimp: Push the vegetables to one side of the skillet. In the cleared space, add the seasoned shrimp and cook until pink and opaque (about 2-3 minutes per side). Stir everything together once the shrimp are done.

Add Cream and Tomatoes: Pour in the heavy cream and add the cherry tomatoes. Stir to combine, bringing the mixture to a gentle simmer. Let it cook for 3-4 minutes until slightly thickened. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

Combine Pasta and Sauce: Add the cooked fettuccine to the skillet, tossing everything together until the pasta is well coated with the sauce. Sprinkle in the grated Parmesan cheese and stir to combine. Season with salt and pepper to taste.

Serve: Plate the Fiery Cajun Shrimp Pasta, garnishing with freshly chopped parsley and serving with lemon wedges on the side for an extra zing. Enjoy your spicy culinary adventure!
