1 lb (450g) young carrots, scrubbed and trimmed

3 tablespoons harissa paste

2 tablespoons olive oil

1 tablespoon honey or maple syrup

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Fresh cilantro or parsley, chopped for garnish

Greek yogurt or tahini, for drizzling (optional)

Lemon wedges, for serving

Prep the Carrots: Preheat your oven to 425°F (220°C). If the carrots are large, cut them in half lengthwise. Place the carrots on a large baking sheet.

    Make the Harissa Marinade: In a small bowl, whisk together harissa paste, olive oil, honey (or maple syrup), ground cumin, smoked paprika, salt, and pepper until well combined.
