1 lb (450g) medium-sized carrots, peeled and cut into sticks

3 tablespoons harissa paste (adjust for spice preference)

2 tablespoons olive oil

1 teaspoon honey or maple syrup

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh cilantro, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the oven: Preheat your oven to 425°F (220°C).

    Prepare the carrots: In a large bowl, toss the carrot sticks with olive oil, harissa paste, honey, ground cumin, smoked paprika, and a generous pinch of salt and black pepper until they are well coated.
