Fig Jam Muffins

1 cup dried figs, chopped

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

2 large eggs

1 cup buttermilk (or substitute with milk + 1 tbsp lemon juice)

1/3 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup walnuts or pecans, chopped (optional)

Zest of 1 orange (optional, for added flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Prepare the Figs: In a small bowl, soak the chopped dried figs in warm water for about 10 minutes to soften them. Drain and set aside.

      Mix the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

        Combine the Wet Ingredients: In another bowl, beat the eggs and then whisk in the buttermilk, vegetable oil, vanilla extract, and orange zest (if using).

          Combine Wet and Dry Mixtures: Pour the wet ingredient mixture into the dry ingredients and stir until just combined. Be careful not to over-mix! Gently fold in the softened figs and nuts, if using.

            Fill the Muffin Tins: Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full to allow room for rising.

              Bake: Place in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool and Serve: Once baked, remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
