Firecracker Chicken Taco Bowls

For the Firecracker Chicken:

1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

1/2 cup hot sauce (choose your favorite brand)

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon olive oil

2 cloves garlic (minced)

1 teaspoon ginger (grated)

Salt and pepper to taste

For the Taco Bowls:

2 cups cooked brown rice or quinoa

1 can (15 oz) black beans (rinsed and drained)

1 cup corn (canned or frozen)

1 red bell pepper (diced)

1 avocado (sliced)

1 cup cherry tomatoes (halved)

1/2 cup red onion (finely chopped)

1/4 cup fresh cilantro (chopped)

Lime wedges (for serving)

Sliced jalapeños (optional, for extra heat)

Sour cream or Greek yogurt (optional, for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the hot sauce, honey, soy sauce, rice vinegar, olive oil, garlic, ginger, salt, and pepper. Add the chicken pieces to the marinade and mix well. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken along with the marinade. Cook the chicken for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and has a nice glaze. Remove from heat.

      Prepare the Base: While the chicken is cooking, prepare the base for the taco bowls. Divide the cooked brown rice or quinoa evenly among 4 bowls.

        Assemble the Bowls: On top of the rice or quinoa, layer the black beans, corn, diced red bell pepper, sliced avocado, cherry tomatoes, and red onion. Spoon the cooked firecracker chicken over each bowl.

          Garnish and Serve: Sprinkle chopped cilantro over the bowls and add sliced jalapeños if desired. Serve with lime wedges and a dollop of sour cream or Greek yogurt for a creamy touch.
