1 cup ricotta cheese

1/2 cup granulated sugar

1/3 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 cup fresh blueberries (or frozen, thawed)

Zest of 1 lemon (optional for added flavor)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Combine Wet Ingredients: In a large mixing bowl, combine the ricotta cheese, granulated sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth and well incorporated.

      Add Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the ricotta mixture, folding gently with a spatula until just combined. Do not overmix; a few lumps are okay.
