1 cup ricotta cheese

1 cup all-purpose flour

2 large eggs

1/2 cup milk

1/4 cup granulated sugar

1 tbsp baking powder

1/4 tsp salt

Zest of 1 lemon

2 tbsp lemon juice

1/2 tsp vanilla extract

Butter or oil for cooking

Maple syrup or honey for serving

Fresh berries for garnish (optional)

Instructions
 

In a large mixing bowl, whisk together the ricotta cheese, eggs, and milk until smooth.

    Add the granulated sugar, lemon zest, lemon juice, and vanilla extract to the ricotta mixture, stirring until fully combined.

      In another bowl, sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon, mixing just until combined. Do not overmix; lumps are okay!

        Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.

          Scoop about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 3-4 minutes), then carefully flip and cook for another 2-3 minutes until golden brown.

            Repeat with the remaining batter, adding more butter or oil as needed.

              Serve the pancakes warm with a drizzle of maple syrup or honey, topped with fresh berries for an extra burst of flavor.
