2 large eggs

1/2 cup milk (whole or buttermilk for extra richness)

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

Butter or oil for cooking

Prepare the batter: In a large mixing bowl, whisk together the ricotta cheese, eggs, milk, lemon zest, lemon juice, and vanilla extract until smooth and well combined.
