1 tbsp baking powder

1 tsp ground cinnamon

1/4 tsp ground ginger

1/4 cup granulated sugar

1 cup canned pumpkin puree

2 large eggs

1 cup milk (or buttermilk for extra fluffiness)

1/4 cup vegetable oil (or melted butter)

1 tsp vanilla extract

Instructions
 

Preheat your waffle iron according to the manufacturer’s instructions. If required, lightly grease the iron with cooking spray or oil.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and sugar until well combined.

      In another bowl, combine the pumpkin puree, eggs, milk, vegetable oil, and vanilla extract. Whisk until the mixture is smooth and fully incorporated.

        Pour the wet ingredients into the bowl of dry ingredients. Gently fold the mixture together using a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are okay. The batter should be thick and fluffy.

          Pour an appropriate amount of batter into the preheated waffle iron (usually around 1/2 to 3/4 cup, depending on your iron) and close the lid. Cook according to your waffle maker’s instructions until the waffles are golden brown and crisp.

            Carefully remove the waffles and keep them warm in a low oven (around 200°F) while you repeat the process with the remaining batter.
