Frosty Kiwi Cream Cups

3 ripe kiwis, peeled and diced

1 cup coconut cream, chilled

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon fresh lime juice

1/4 cup mint leaves, chopped (plus extra for garnish)

1 tablespoon shredded coconut (toasted, optional)

4 small dessert cups or glasses

Instructions
 

In a medium bowl, combine the diced kiwi with lime juice and half of the mint leaves. Gently toss to coat the kiwi with the lime juice. Set this mixture aside to marinate for 10 minutes.

    While the kiwi is marinating, in a separate mixing bowl, whisk together the chilled coconut cream, honey (or maple syrup), and vanilla extract until smooth and creamy.

      Once the kiwi has marinated, fold it gently into the coconut cream mixture, being careful not to mash the kiwi.

        Spoon the kiwi and cream mixture into the dessert cups, filling each to about three-quarters full.

          Top each cup with a sprinkle of toasted shredded coconut (if using) and a few extra mint leaves for garnish.

            Place the cups in the freezer for about 30 minutes to chill and firm up slightly.

              Serve cold as a refreshing dessert, and enjoy the tropical flavors!
