Frozen Almond Coconut Energy Cubes

Ingredients
  

1 cup raw almonds

1 cup unsweetened shredded coconut

1/2 cup Medjool dates, pitted

1/4 cup almond butter

1/4 cup honey or maple syrup

1/4 teaspoon sea salt

1 teaspoon vanilla extract

Optional: 1/4 cup dark chocolate chips for coating

Instructions
 

Soak the Almonds: Place the raw almonds in a bowl and cover them with water. Allow them to soak for 4-6 hours to make them softer for blending.

    Drain and Rinse: After soaking, drain and rinse the almonds thoroughly under cool running water.

      Blend Ingredients: In a food processor, combine the soaked almonds, shredded coconut, Medjool dates, almond butter, honey or maple syrup, sea salt, and vanilla extract. Pulse until the mixture is finely chopped and begins to stick together. Scrape down the sides as necessary.

        Form the Cubes: Line an 8x8 inch baking dish or a silicone cube mold with parchment paper. Spoon the mixture into the dish/mold, pressing it down firmly to ensure the mixture holds together.

          Chill: Place the dish or mold in the freezer for about 2 hours, or until the mixture is firm.

            Cut or Pop the Cubes: Once frozen, if using a baking dish, remove the block from the dish and cut it into bite-sized cubes. If using a silicone mold, simply pop the energy cubes out.

              Chocolate Coating (optional): If you’d like to add a chocolate coating, melt the dark chocolate chips in a microwave or over a double boiler. Dip each energy cube in the melted chocolate, making sure to coat them completely, and then place them on a parchment-lined plate to set.

                Store: Transfer the energy cubes to an airtight container and keep them in the freezer for up to 3 months. Enjoy them straight from the freezer as a quick energy boost!
