Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup mixed frozen berries (blueberries, raspberries, strawberries)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/4 cup granola (for topping)

Fresh mint leaves (for garnish, optional)

Instructions

Blend the Base: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well until smooth and creamy.

Add the Berries: Gently fold in the mixed frozen berries, being careful not to mash them too much. You want the berries to remain somewhat whole for texture.

Prepare the Cups: Line a muffin tin with cupcake liners or use silicone molds. Spoon the yogurt and berry mixture evenly into each liner or mold, filling them about three-quarters full.

Add Granola: Sprinkle a tablespoon of granola on top of each cup for an added crunch. Press it down slightly to ensure it sticks to the yogurt.

Freeze: Place the muffin tin or molds in the freezer and freeze for at least 4 hours, or until completely solid.

Serve: Once frozen, remove the cups from the molds or muffin tin and gently peel off the liners. If they're difficult to remove, let them sit at room temperature for 5 minutes to soften slightly.

Garnish and Enjoy: Top with a fresh mint leaf if desired, and serve immediately or store in an airtight container in the freezer for future enjoyment.
