Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a mini muffin pan with muffin liners or grease it lightly with cooking spray.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, almond flour, baking powder, baking soda, salt, and cinnamon. Mix well to ensure the ingredients are evenly distributed.

Combine Wet Ingredients: In another bowl, mix the mashed bananas, honey (or maple syrup), applesauce, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredient mixture into the dry ingredients and stir until just combined. Gently fold in the blueberries, being careful not to break them too much.

Fill Muffin Cups: Spoon the batter into the mini muffin pan, filling each cup about 3/4 of the way full.

Bake the Muffins: Bake for about 15-18 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on them, as mini muffins bake faster than regular-sized ones.

Cool Down: Once baked, remove from the oven and let the muffin bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Freeze for Later: Once cooled, you can enjoy them fresh or freeze them for later. To freeze, place the muffin bites in a single layer on a baking sheet and freeze until solid. Then, transfer them to a zip-top freezer bag or airtight container for up to 3 months.

Serve: Enjoy these muffin bites straight from the freezer or let them thaw at room temperature for a bit before indulging!
