Ingredients

For the Crust and Topping:

2 cups rolled oats

1 cup all-purpose flour (or whole wheat for a healthier option)

1/2 cup brown sugar, packed

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup cold unsalted butter, cubed

1/4 cup honey or maple syrup

For the Blueberry Filling:

2 cups frozen blueberries (no need to thaw)

1/4 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 tablespoon lemon juice

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Crust and Topping: In a mixing bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Mix well. Add the cold cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Stir in the honey or maple syrup until just combined.

Bake the Crust and Topping: Press about 2 cups of the crust mixture firmly into the bottom of a greased 9x9 inch baking dish. Reserve the remaining mixture for the topping. Bake in the preheated oven for 10-12 minutes until lightly golden.

Make the Blueberry Filling: In a medium bowl, combine the frozen blueberries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Stir gently to coat the blueberries without breaking them apart.

Assemble the Slice: Once the crust is baked, remove it from the oven and let it cool for a few minutes. Spread the blueberry filling evenly over the crust. Then, sprinkle the reserved oat mixture over the top to create an even crumble layer.

Final Bake: Return the baking dish to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the blueberries are bubbly.

Cool and Slice: Remove from the oven and allow to cool completely at room temperature. For best results, refrigerate for at least 2 hours before cutting into squares.

Serve: Cut into squares or slices and enjoy as a delicious snack or breakfast option—perfect served cold or at room temperature!
