2 cups shredded carrots

1 cup plain Greek yogurt

1 cup coconut milk (full-fat for creaminess)

1/2 cup honey or maple syrup (adjust according to taste)

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 cup raisins (optional)

1/4 cup chopped walnuts or pecans (optional)

Pinch of salt

Prepare the Carrots: If you haven't done so already, shred the carrots finely using a grater or food processor. This will allow them to blend smoothly into the yogurt mixture.

    Mix the Ingredients: In a large mixing bowl, combine the shredded carrots, Greek yogurt, coconut milk, honey (or maple syrup), vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt. Mix well until all ingredients are thoroughly incorporated and the mixture is creamy.

      Add Optional Ingredients: If you are using raisins and nuts, fold them into the mixture gently. This adds texture and adds to the carrot cake flavor.

        Prepare the Molding: Pour the carrot cake mixture into a square or rectangular baking dish (approximately 9x9 inches works well) or individual silicone molds for easier removal.

          Freeze: Place the dish in the freezer and let it freeze for at least 4-6 hours, or until completely solid.

            Cut and Serve: Once fully frozen, remove the dish from the freezer. If using a baking dish, let it sit at room temperature for a few minutes before cutting it into squares. If using molds, gently squeeze or run warm water along the outside to pop them out.
