1 cup rolled oats

½ cup chocolate chips (semi-sweet or dark)

For the Banana Layer:

2 ripe bananas

1 tbsp lemon juice

For the Chocolate Coating:

1 cup dark chocolate chips

2 tsp coconut oil (optional, for smoothness)

Sprinkles, chopped nuts, or shredded coconut (for decoration, optional)

Instructions
 

Make the Cookie Dough:

    In a bowl, whisk together the flour, baking soda, and salt. In another bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy. Beat in the egg and vanilla extract. Gradually mix in the dry ingredients until combined. Stir in the rolled oats and chocolate chips.

      Shape the Cookies:

        Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with your hand.

          Bake the Cookies:

            Bake for 10-12 minutes or until the edges are golden and the centers are set. Allow the cookies to cool completely on a wire rack.

              Prepare the Banana Layer:

                While the cookies cool, mash the ripe bananas in a bowl and add the lemon juice to prevent browning. Mix until smooth but still a bit chunky.
