1 cup Greek yogurt (plain or vanilla)

1 teaspoon vanilla extract

1 cup dark chocolate chips (or dairy-free chocolate chips)

1 tablespoon coconut oil

1/2 cup crushed almonds or graham cracker crumbs (for coating)

A pinch of sea salt

Prepare the Strawberries: Begin by placing the chopped strawberries in a blender or food processor. Add the honey or maple syrup (if using) and blend until smooth. Taste and adjust sweetness if necessary.

    Combine Ingredients: In a bowl, mix the strawberry puree with Greek yogurt and vanilla extract until fully combined. The mixture should be smooth and creamy.

      Form the Truffles: Using a spoon or a cookie scoop, portion out the yogurt-strawberry mixture and roll it into small balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet.

        Freeze: Transfer the baking sheet to the freezer and freeze the truffles for about 1 hour or until firm.

          Melt Chocolate: While the truffles are freezing, melt the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring in between until smooth and fully melted.
