Ingredients

1 medium ripe pineapple, peeled, cored, and diced into small chunks

1 cup coconut milk (full-fat for creaminess)

1/2 cup unsweetened shredded coconut

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

Pinch of sea salt

1/4 cup chopped macadamia nuts or almonds (optional)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Pineapple: Begin by cutting the ripe pineapple into small, bite-sized chunks. Aim for uniform pieces to ensure even freezing.

Mix the Coconut Mixture: In a medium bowl, combine the coconut milk, shredded coconut, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Whisk together until well blended and creamy.

Coat the Pineapple: Dip each pineapple chunk into the coconut mixture, making sure to coat it thoroughly. Leave excess liquid drips from the pineapple.

Add Nuts (Optional): If using, sprinkle some chopped macadamia nuts or almonds over the coated pineapple chunks for an extra crunch.

Freeze the Bites: Line a baking sheet with parchment paper. Place the coated pineapple pieces on the sheet in a single layer, leaving space between them.

Freeze Until Solid: Transfer the baking sheet to the freezer and allow the bites to freeze for at least 2 hours, or until fully solid.

Serve: Once frozen, you can garnish your Tropical Paradise Bites with fresh mint leaves. Serve immediately, or store in an airtight container in the freezer for up to 2 weeks.

Enjoy these refreshing, tropical treats perfect for hot days or as a delightful dessert!
