Ingredients

2 ripe mangoes, peeled and cut into thick rings

1 ½ cups coconut yogurt (preferably unsweetened)

2 tablespoons honey or maple syrup (optional, adjust based on sweetness preference)

1 teaspoon vanilla extract

¼ cup shredded coconut (unsweetened)

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Mango Rings: Start by slicing the peeled mangoes into thick rings about ½ inch thick. Use a small round cookie cutter (or similar) to remove the central pit, creating a hole in the middle of each ring.

Make the Coconut Yogurt Mixture: In a mixing bowl, combine the coconut yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until the mixture is smooth and well combined.

Coat the Mango Rings: Dip each mango ring into the coconut yogurt mixture, ensuring each side is evenly coated. Allow any excess yogurt to drip off.

Top with Coconut: Sprinkle the coated mango rings generously with shredded coconut to add texture and enhance the tropical flavor.

Freeze: Line a baking sheet with parchment paper. Place the coated mango rings on the sheet, making sure they are not touching each other. Freeze for at least 3 hours or until solid.

Serve: Once frozen, remove the mango rings from the freezer. You can let them sit at room temperature for a couple of minutes for easier handling. Garnish with fresh mint leaves if desired, and enjoy your refreshing frozen treat!
