2 cups plain Greek yogurt

1 cup brewed espresso or strong coffee, cooled

1/2 cup almond milk (or milk of choice)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon cocoa powder (for dusting)

A pinch of salt

Optional: mini chocolate chips or a sprinkle of cinnamon for garnish

Instructions
 

Prepare the Coffee Base: In a mixing bowl, combine the cooled espresso or strong coffee, almond milk, honey or maple syrup, vanilla extract, and a pinch of salt. Whisk until the honey or syrup is fully dissolved.

    Mix the Greek Yogurt: In another bowl, place the Greek yogurt and slowly pour in the coffee mixture while stirring gently. You want a smooth and creamy consistency. Taste and adjust sweetness as needed.

      Pour into Molds: Carefully pour the mixture into popsicle molds, filling them about 3/4 full to allow for expansion. If desired, sprinkle mini chocolate chips or a light dusting of cocoa powder on top for added flavor.

        Insert Sticks: Place the popsicle sticks into the center of each mold. If using molds with lids, secure the lids over the sticks to hold them in place.

          Freeze: Transfer the molds to the freezer and let them freeze for at least 6 hours, or until completely solid.

            Release and Enjoy: To remove the pops, run warm water over the outside of the molds for a few seconds to loosen them. Gently pull on the sticks to release the popsicles.
