Frozen Lemon Yogurt Bites with Chia

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust based on sweetness preference)

Zest of 2 lemons

1/4 cup freshly squeezed lemon juice

2 tablespoons chia seeds

1 teaspoon vanilla extract

A pinch of salt

Prepare the Mixture: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and a pinch of salt. Whisk until smooth and well combined.

    Add Chia Seeds: Stir in the chia seeds evenly throughout the yogurt mixture. Allow it to sit for about 5 minutes so the chia seeds can absorb some moisture and start to plump up.

      Spoon into Molds: Pour the yogurt mixture into silicone molds or an ice cube tray, ensuring that each section is filled to the top. Smooth out the surface with a small spatula or spoon.

        Freeze: Place the molds in the freezer and let them freeze for at least 4 hours, or until completely solid.

          Remove from Molds: Once frozen, carefully remove the yogurt bites from the molds. If they’re hard to release, you can briefly run warm water over the outside of the molds to help release them.

            Store: Transfer the frozen bites to an airtight container and store in the freezer. Enjoy them within 2-3 weeks for optimal taste.
