For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Filling:

1 cup fresh lemon juice (about 4-6 lemons)

Zest of 2 lemons

1 can (14 oz) sweetened condensed milk

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract

For Garnish (optional):

Lemon slices

Mint leaves

Whipped cream

Instructions
 

Prepare the Crust:

    In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9x9-inch baking dish to form an even layer. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove from the oven and allow it to cool completely.

      Make the Filling:

        In a large mixing bowl, whisk together the fresh lemon juice, lemon zest, and sweetened condensed milk until smooth.

          Whip the Cream:

            In a separate bowl, whip the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. Gently fold the whipped cream into the lemon mixture until just combined, being careful not to deflate the whipped cream.

              Combine and Freeze:

                Pour the lemon filling over the cooled graham cracker crust. Spread it evenly with a spatula. Cover the dish with plastic wrap or foil and place it in the freezer for at least 4 hours or until firm.

                  Slice and Serve:

                    Once the pie bars are set, remove from the freezer and let them sit at room temperature for about 5–10 minutes for easier slicing. Cut into bars and garnish with lemon slices and fresh mint leaves, if desired. Serve with a dollop of whipped cream on top.
