Frozen Mango Coconut Bars

2 ripe mangos, peeled and diced

1 cup coconut cream (use canned coconut milk, chilled)

1/4 cup honey or maple syrup (adjust to taste)

1/4 cup shredded unsweetened coconut

1/4 cup lime juice (freshly squeezed)

1 teaspoon vanilla extract

Prepare the Mango Puree: In a blender, combine the diced mangos, lime juice, honey or maple syrup, and a pinch of salt. Blend until smooth. Set aside half of the mango puree in a bowl.

    Mix Coconut Cream: In another bowl, whisk together the chilled coconut cream and vanilla extract until smooth and creamy. Gently fold in the shredded coconut for added texture.

      Layer the Bars: Line a 9x5-inch loaf pan with parchment paper, allowing some overhang for easy removal. Start by pouring half of the mango puree into the bottom of the prepared pan, spreading it evenly.

        Add Coconut Layer: Spoon the coconut cream mixture over the mango layer, smoothing it out to create a second layer.

          Top with Remaining Mango: Finally, drizzle the remaining mango puree on top of the coconut layer. Use a toothpick or knife to gently swirl the mixtures together for a marbled effect.

            Freeze: Cover the pan with plastic wrap or foil and freeze for at least 4-6 hours, or until completely solid.

              Serve: Once frozen, remove the bars from the pan using the parchment overhang. Cut into squares or rectangles and enjoy them immediately or store in an airtight container in the freezer.
