2 cups plain Greek yogurt

2 ripe mangoes, diced

1/2 cup honey (or maple syrup for a vegan option)

1/4 cup chopped mint leaves (optional)

1/4 cup unsweetened shredded coconut

1/4 cup walnuts or almonds, roughly chopped (optional)

A pinch of sea salt

Zest of 1 lime

Prepare the Mangoes: Start by peeling and dicing the mangoes into small pieces. Set aside.

    Mix the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), lime zest, and a pinch of sea salt. Stir well until the mixture is smooth and well combined.

      Layer the Yogurt: Line a baking sheet with parchment paper. Pour the yogurt mixture onto the prepared baking sheet and spread it evenly to about 1/2-inch thickness.

        Add Mango and Toppings: Evenly distribute the diced mango over the yogurt layer. Sprinkle the shredded coconut, chopped nuts (if using), and mint leaves on top of the mango.

          Freeze: Place the baking sheet in the freezer and freeze for at least 4 hours, or until the yogurt bark is completely firm.

            Break into Pieces: Once frozen, remove the baking sheet from the freezer. Use your hands or a knife to break the frozen yogurt bark into pieces.

              Serve or Store: Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
