2 cups fresh or frozen pineapple chunks

1 cup coconut yogurt (dairy-free or regular)

1/2 cup coconut milk (canned for creaminess)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

Pinch of sea salt

Optional toppings: shredded coconut, mini chocolate chips, or chopped nuts

Instructions
 

Blend Ingredients: In a blender, combine the pineapple chunks, coconut yogurt, coconut milk, honey or maple syrup, vanilla extract, and a pinch of sea salt. Blend until smooth and creamy, scraping down the sides as needed.

    Taste and Adjust: Taste your mixture. If you prefer it sweeter, add an extra drizzle of honey or maple syrup and blend again.

      Pour into Molds: Carefully pour the mixture into popsicle molds, filling them about 3/4 of the way to allow room for expansion.

        Optional Toppings: If desired, you can sprinkle some shredded coconut or mini chocolate chips on top of the poured mixture for added texture and flavor.

          Insert Sticks: Place the popsicle sticks into the molds and make sure they are steady.

            Freeze: Transfer the molds to the freezer and freeze for at least 4-6 hours, or until completely set.

              Unmold and Enjoy: To remove the pops, run hot water over the outside of the molds for a few seconds until they release easily. Enjoy as a refreshing treat on a sunny day!
