Ingredients
  

2 cups fresh pineapple chunks (about 1 medium pineapple)

1 cup plain Greek yogurt (or coconut yogurt for a dairy-free option)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon fresh lime juice

1/2 teaspoon vanilla extract (optional)

Pinch of salt

Optional toppings: shredded coconut, mini chocolate chips, or chopped nuts

Instructions
 

Prepare the Pineapple:

    - If using a fresh pineapple, peel, core, and cut it into chunks. You can also use frozen pineapple chunks for a quicker option.

      Blend the Ingredients:

        - In a blender or food processor, combine the pineapple chunks, Greek yogurt, honey or maple syrup, lime juice, vanilla extract (if using), and a pinch of salt. Blend until smooth and creamy. Taste and adjust sweetness if necessary.

          Fill the Molds:

            - Pour the pineapple yogurt mixture into popsicle molds, leaving a little space at the top for expansion as they freeze. If you want to add toppings, you can sprinkle them into the mixture before freezing or layer them in the molds.

              Insert Sticks:

                - If your popsicle molds don't have built-in sticks, insert wooden popsicle sticks into the center of each mold.

                  Freeze:

                    - Place the molds in the freezer and freeze for at least 4 hours, or until completely solid.

                      Unmold and Serve:

                        - To remove the pops, run warm water over the outside of the molds for a few seconds until they loosen. Gently pull on the sticks to remove the pops.
