Ingredients

2 cups frozen raspberries

1 cup almond butter (smooth or crunchy)

1/4 cup honey or maple syrup (for vegan option)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup sliced almonds

1/4 cup dark chocolate chips (optional, for drizzling)

Instructions

Prepare the Raspberries: In a mixing bowl, gently mash the frozen raspberries with a fork. Leave some texture for a delightful burst of flavor in every bite.

Make the Almond Butter Mixture: In a separate bowl, combine almond butter, honey (or maple syrup), vanilla extract, and sea salt. Mix thoroughly until you achieve a creamy consistency.

Combine Ingredients: Fold the mashed raspberries into the almond butter mixture. Stir gently to avoid completely breaking down the raspberries; you want chunks for added flavor.

Form the Clusters: Using a spoon or a cookie scoop, drop tablespoon-sized dollops of the mixture onto a parchment-lined baking sheet. Space them evenly, as they will spread slightly while freezing.

Top with Almonds (and Chocolate): Sprinkle sliced almonds on top of each cluster before freezing. If you’re adding chocolate, melt the chocolate chips in a microwave or double boiler until smooth, then drizzle over the clusters.

Freeze: Place the baking sheet in the freezer and let the clusters freeze for at least 2 hours or until solid.

Store and Serve: Once frozen, transfer the clusters to an airtight container and store in the freezer. Enjoy them straight from the freezer for a refreshing snack, or let them sit for a few minutes at room temperature before indulging.
