Frozen Raspberry Lemonade Bars

1 ½ cups fresh raspberries (or frozen, thawed)

1 cup granulated sugar, divided

1 cup freshly squeezed lemon juice (about 4-6 lemons)

2 tablespoons lemon zest (zest from about 2 lemons)

¾ cup coconut milk (canned or carton)

2 large egg whites

½ teaspoon vanilla extract

A pinch of salt

Extra raspberries and lemon slices for garnish (optional)

Instructions
 

Prepare the Raspberry Layer: In a blender or food processor, combine the fresh raspberries and ½ cup of sugar. Blend until smooth. Strain the mixture through a fine-mesh sieve to remove seeds if desired. Set aside.

    Make the Lemonade Base: In a medium mixing bowl, whisk together the remaining ½ cup of sugar, freshly squeezed lemon juice, lemon zest, coconut milk, egg whites, vanilla extract, and a pinch of salt until well combined.

      Assemble the Layers: Line an 8×8 inch baking dish with parchment paper for easy removal. Pour half of the lemonade mixture into the prepared dish, smoothing the top evenly.

        Add the Raspberry Layer: Carefully spoon the raspberry puree over the lemonade base. Use a knife or skewer to swirl the raspberry layer into the lemonade layer for a marbled effect.

          Top with the Rest of the Lemonade Mixture: Pour the remaining lemonade mixture over the raspberry layer, ensuring it is spread evenly.
