1 cup rolled oats

½ cup almond flour

¼ cup honey or maple syrup

1/3 cup natural peanut butter or almond butter

¼ teaspoon salt

½ teaspoon vanilla extract

1 cup fresh or frozen raspberries

1 tablespoon lemon juice

½ teaspoon cornstarch (optional, for thickening)

½ cup Greek yogurt (optional, for filling)

Extra oats or nuts for garnish (optional)

Prepare the Dough: In a mixing bowl, combine the rolled oats, almond flour, honey (or maple syrup), peanut butter, salt, and vanilla extract. Mix until fully combined and a dough begins to form.

    Form Cookies: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Take a tablespoon of the dough and roll it into a ball, then flatten it into a cookie shape. Repeat this for the remaining dough, spacing cookies about 1 inch apart on the baking sheet.

      Bake: Bake for 10-12 minutes or until the edges are golden brown. Remove from the oven and allow the cookies to cool completely on a wire rack.

        Prepare the Raspberry Filling: In a small saucepan over medium heat, combine the raspberries and lemon juice. Cook for about 5 minutes, gently mashing the raspberries with a fork to release their juices. If you want a thicker consistency, stir in the cornstarch and cook for an additional minute until the mixture thickens slightly. Remove from heat and let cool.

          Assemble Sandwiches: Once the cookies are completely cooled, spread a spoonful of raspberry filling on the bottom of half the cookies. If you are using Greek yogurt, add a layer of it on top of the raspberry filling. Top each with another cookie to create a sandwich.

            Freeze: Place the assembled sandwiches in a single layer on a baking sheet or plate. Freeze for at least 2 hours or until firm.
