4 cups seedless watermelon, cubed

1 ½ cups plain Greek yogurt

¼ cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

¼ cup fresh mint leaves, finely chopped

Pinch of salt

Lime zest from 1 lime (optional)

Prepare the Watermelon: Start by cutting the watermelon into cubes, removing any seeds if necessary. Place the watermelon in a blender or food processor and blend until smooth. You should have about 3 cups of watermelon puree.

    Mix the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Whisk until the mixture is creamy and well-combined. Taste and adjust sweetness if necessary.

      Combine Ingredients: Gently fold the chopped mint leaves into the yogurt mixture. If you like a hint of citrus, add the lime zest at this stage as well.

        Layer the Mixtures: In a shallow dish or a silicone mold, pour a layer of the watermelon puree (about ½ inch thick). Then, pour a layer of the yogurt mixture on top (about ½ inch thick). You can swirl the two mixtures together slightly for a marbled effect if desired.

          Freeze: Place the dish or molds in the freezer and let freeze for at least 4-6 hours or until solid.

            Slice and Serve: Once frozen solid, remove from the freezer, and let it sit for a few minutes to soften slightly. If using a silicone mold, pop out the slices. If using a dish, use a sharp knife to cut into rectangular or square slices.

              Garnish (Optional): For an extra touch, you can sprinkle additional chopped mint leaves or a drizzle of honey over the slices before serving.
