2 cups plain Greek yogurt (unsweetened)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tsp vanilla extract

2 medium apples (preferably Granny Smith or Honeycrisp), peeled and diced

1 tsp cinnamon

1 tbsp lemon juice

1/4 cup finely chopped walnuts or pecans (optional)

Pinch of salt

Instructions
 

Prepare the Apples: In a medium bowl, combine the diced apples, cinnamon, lemon juice, and a pinch of salt. Mix well to ensure the apples are evenly coated. Set aside to allow the flavors to meld for about 10 minutes.

    Make the Yogurt Base: In a large mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and creamy.

      Combine Ingredients: Gently fold the prepared apple mixture into the yogurt base. If you’re using nuts, add them at this stage for extra crunch and flavor.

        Form the Discs: Line a baking sheet with parchment paper. Using a round cookie cutter, spoon the yogurt-apple mixture into the mold, spreading it evenly to about 1/2 inch thick. If you don’t have cookie cutters, simply scoop the mixture into circles using a spoon.

          Freeze: Place the baking sheet in the freezer and allow the yogurt discs to freeze for at least 4 hours, or until completely solid.

            Serve: Once frozen, carefully peel the discs off the parchment paper. Serve immediately or store them in an airtight container in the freezer for up to two weeks. Enjoy this refreshing treat on a hot day or as a healthy dessert!
