Frozen Yogurt Blueberry Chia Muffin Bars

2 cups rolled oats

1 cup whole wheat flour

1/4 cup chia seeds

1/2 cup honey or maple syrup

1/2 cup Greek yogurt (vanilla or plain)

3/4 cup almond milk (or any milk of choice)

1 cup fresh or frozen blueberries

1/4 cup coconut oil, melted

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

Preheat Oven: Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Combine Dry Ingredients: In a large bowl, whisk together the rolled oats, whole wheat flour, chia seeds, baking powder, baking soda, and salt until well combined.

      Mix Wet Ingredients: In another bowl, mix the honey (or maple syrup), Greek yogurt, almond milk, coconut oil, and vanilla extract until smooth and well incorporated.

        Combine Mixtures: Gradually add the wet ingredients to the dry ingredients. Stir until just combined. Be careful not to overmix; it's okay if there are a few lumps.

          Fold in Blueberries: Gently fold in the blueberries, taking care not to break them apart too much if using fresh berries.

            Bake: Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

              Cool Down: Once baked, remove the pan from the oven and let it cool in the pan on a wire rack for about 10 minutes.
