1/2 cup applesauce (unsweetened)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

1 cup frozen yogurt (your favorite flavor, for serving)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease with cooking spray.

    Mix the Dry Ingredients: In a medium bowl, combine the all-purpose flour, rolled oats, brown sugar, baking powder, baking soda, ground cinnamon, nutmeg, and salt. Stir until evenly mixed.

      Prepare the Wet Ingredients: In a separate large bowl, whisk together the Greek yogurt, applesauce, honey (or maple syrup), and vanilla extract until smooth and well combined.

        Add Carrots: Stir the finely grated carrots into the wet ingredient mixture.
