Ingredients

For the crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/3 cup unsalted butter, melted

For the cheesecake filling:

2 cups plain Greek yogurt

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup sour cream

For the cherry topping:

2 cups fresh or frozen cherries, pitted

1/4 cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch mixed with 1 tbsp water (optional, for thickening)

Instructions

Prepare the Crust:

    - In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are fully coated and resemble wet sand.

      - Press the crumb mixture firmly into the bottom of a 9x9 inch baking dish to create an even layer. Set aside.

        Make the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.

            - Add the Greek yogurt, powdered sugar, vanilla extract, and sour cream. Beat until well combined and fluffy, scraping the sides of the bowl as necessary.

              Assemble the Cheesecake:

                - Spread the cheesecake filling evenly over the prepared crust, smoothing the top with a spatula.

                  - Freeze for at least 2 hours or until the cheesecake is firm.

                    Prepare the Cherry Topping:

                      - In a saucepan, combine the cherries, granulated sugar, and lemon juice over medium heat. Cook, stirring gently until the cherries start to release their juices (about 5 minutes).

                        - If you prefer a thicker sauce, add the cornstarch and water mixture while stirring continuously. Allow it to simmer for another minute until thickened. Remove from heat and let it cool.

                          Serve:

                            - Once the cheesecake is firm, remove it from the freezer and cut it into slices.

                              - Top each slice with a generous spoonful of the cherry topping just before serving.

                                - Return any leftovers to the freezer to maintain optimal freshness.
