For the Cookie Dough:

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

For the Churro Coating:

1/2 cup granulated sugar

1 tablespoon ground cinnamon

For the Frozen Yogurt Filling:

2 cups vanilla yogurt (or your favorite flavor)

1 tablespoon honey (optional)

1 teaspoon vanilla extract

Instructions
 

Prepare the Cookie Dough:

    - In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      - Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until combined.

        Combine Dry Ingredients:

          - In a separate bowl, combine the flour, baking soda, salt, and ground cinnamon. Gradually add this mixture to the wet ingredients, mixing until just combined.

            Chill the Dough:

              - Cover the cookie dough with plastic wrap and refrigerate for at least 1 hour, allowing it to firm up.

                Prepare the Frozen Yogurt:

                  - While the dough is chilling, in a medium bowl, mix together the vanilla yogurt, honey (if using), and vanilla extract until smooth.

                    - Spoon the yogurt mixture into an ice cube tray or silicone molds, making sure to leave a little space at the top. Freeze for about 4–6 hours or until completely solid.

                      Preheat the Oven:

                        - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

                          Form the Cookie Bombs:

                            - Once the cookie dough has chilled, scoop out about 2 tablespoons of dough and flatten it in your palm. Place a frozen yogurt piece in the center and wrap the dough around it, rolling it into a ball. Repeat until all the dough is used.

                              Coat the Cookie Bombs:

                                - In a small bowl, combine 1/2 cup of granulated sugar and 1 tablespoon of ground cinnamon. Roll each cookie bomb in the cinnamon-sugar mixture until fully coated.

                                  Bake:

                                    - Place the coated cookie bombs on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes or until the edges are slightly golden but the center is still soft.

                                      Cool and Serve:

                                        - Let the cookie bombs cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Serve warm, and enjoy the gooey frozen yogurt explosion inside!
