Ingredients

2 cups Greek yogurt (plain or vanilla flavored)

1 cup dried figs, chopped

1/2 cup honey or maple syrup (adjust to taste)

1/2 cup sliced almonds (toasted)

1 teaspoon vanilla extract

A pinch of salt

Optional: 1/4 teaspoon ground cinnamon for added warmth

Instructions

Prepare the Figs: If your dried figs are too dry, soak them in warm water for about 15 minutes to soften, then drain and chop them into small pieces.

Mix the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. If you're using ground cinnamon, add it at this stage. Mix well until the ingredients are fully combined and smooth.

Incorporate Figs and Almonds: Gently fold in the chopped figs and toasted almond slices into the yogurt mixture, ensuring an even distribution throughout.

Mold the Discs: Line a baking sheet with parchment paper. Using a spoon or a silicone mold, portion out the yogurt mixture into round discs (around 2 inches in diameter) on the parchment paper. Smooth the tops with the back of the spoon to make them even.

Freeze: Place the baking sheet in the freezer for at least 4 hours or until the discs are solidly frozen.

Serve and Enjoy: Once the discs are frozen, pop them off the parchment paper and serve immediately, or store in an airtight container in the freezer. Enjoy this delightful treat straight from the freezer on a warm day!

Optional Toppings: You can sprinkle extra toasted almonds or drizzle a little bit of honey on top right before serving for an extra touch of sweetness and crunch.
