Ingredients

For the Frozen Yogurt:

2 cups of plain Greek yogurt

1 cup of honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup of mixed berries (fresh or frozen)

For the Granola:

2 cups rolled oats

1 cup nuts (almonds, walnuts, or pecans, chopped)

1/2 cup honey or maple syrup

1/4 cup coconut oil (melted)

1 teaspoon cinnamon

1/4 teaspoon salt

For Toppings:

Additional mixed berries

Shredded coconut (optional)

Dark chocolate chips (optional)

Chopped nuts (optional)

Instructions

Make the Frozen Yogurt:

    - In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and well blended.

      - Gently fold in the mixed berries until evenly distributed.

        - Pour the yogurt mixture into a freezer-safe container and smooth the top.

          - Freeze for at least 4 hours or until solid.

            Prepare the Granola:

              - Preheat your oven to 350°F (175°C).

                - In a large bowl, combine the rolled oats, chopped nuts, melted coconut oil, honey (or maple syrup), cinnamon, and salt. Mix well to ensure the oats and nuts are completely coated.

                  - Spread the granola mixture evenly on a baking sheet lined with parchment paper.

                    - Bake for 20-25 minutes, stirring halfway through, until golden brown. Keep an eye on it to prevent burning. Let cool completely before using.

                      Assemble the Ice Cream Cups:

                        - Once the frozen yogurt is ready, remove it from the freezer and let it sit for about 5 minutes to soften slightly.

                          - Using an ice cream scoop, spoon the frozen yogurt into small cups or bowls, packing it in tightly.

                            - Top the yogurt with a generous layer of granola and any additional toppings you desire (more berries, nuts, coconut, or chocolate chips).

                              Serve:

                                - Serve immediately as a refreshing treat or return the assembled cups to the freezer for another 30 minutes if you prefer them a bit firmer.

                                  - Enjoy your delicious Frozen Yogurt Granola Ice Cream Cups!
