Ingredients

2 cups plain Greek yogurt

1/4 cup honey (plus extra for drizzling)

1 tsp vanilla extract

1 1/2 cups granola (preferably with nuts and dried fruits)

1/4 cup mini chocolate chips (optional)

Fresh berries (strawberries, blueberries, or raspberries for garnish)

1/2 teaspoon cinnamon (optional)

4 large cookies (chocolate chip or oatmeal raisin work well)

Instructions

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until the ingredients are well incorporated and smooth. Add cinnamon if desired for extra flavor.

Form the Yogurt Filling: Fold in the granola and mini chocolate chips gently into the yogurt mixture until evenly distributed. The granola will add a lovely crunch and texture.

Assemble the Sandwiches: Take one cookie and spoon a generous amount of the yogurt mixture onto the flat side. Use a spatula or the back of a spoon to spread it evenly. Lastly, place another cookie on top, flat side down, completing the sandwich. Repeat with the remaining cookies and yogurt mixture.

Freeze the Sandwiches: Place the assembled sandwiches on a baking sheet lined with parchment paper. Once all sandwiches are assembled, place the baking sheet in the freezer. Freeze for at least 2 hours or until the yogurt is firm.

Serve: Once frozen, remove the sandwiches from the freezer. If desired, drizzle a little extra honey over the top and add fresh berries as garnish. Slice the sandwiches in half for easier handling or serve whole.

Enjoy: Dig in immediately for a cold, refreshing treat or store any leftovers in an airtight container in the freezer for up to one week.
