1/2 cup honey or maple syrup (for a vegan option)

2 tablespoons culinary-grade matcha green tea powder

1 teaspoon vanilla extract

Pinch of salt

1/4 cup shredded coconut (optional, for texture)

Fresh berries (like raspberries or blueberries, for topping)

Chopped nuts (like almonds or pistachios, for garnish)

Instructions
 

In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), matcha powder, vanilla extract, and a pinch of salt. Whisk until smooth and well combined. Ensure there are no clumps of matcha for a perfect, creamy texture.

    If you’re adding shredded coconut, fold it into the mixture at this stage to incorporate it evenly.

      Line an 8x8 inch (or similar size) baking dish with parchment paper, leaving some overhang for easy removal later. Pour the matcha yogurt mixture into the lined dish, smoothing out the top with a spatula.

        Place the dish in the freezer and allow it to freeze for at least 4 hours, or until fully set.

          Once frozen, remove from the freezer and let sit at room temperature for about 5 minutes to soften slightly for easier cutting.

            Using the overhanging parchment paper, lift the yogurt square from the dish and place it on a cutting board. Cut into squares or rectangles (about 2 inches each works well).
