Ingredients

1 cup Greek yogurt (plain or flavored)

1/2 cup almond butter (or your favorite nut butter)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1/2 cup rolled oats

1/4 cup mini chocolate chips (dark, semi-sweet, or white)

1/4 cup chopped nuts (walnuts, pecans, or almonds)

1/2 teaspoon vanilla extract

A pinch of salt

Optional toppings: shredded coconut, chia seeds, or dried fruit

Instructions

Mix the Ingredients: In a medium bowl, combine the Greek yogurt, almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until smooth and well incorporated.

Add the Dry Ingredients: Fold in the rolled oats, mini chocolate chips, and chopped nuts until evenly mixed.

Prepare the Mold: Line a muffin tin or silicone mold with muffin liners, or lightly grease them to ensure easy removal.

Fill the Molds: Scoop the yogurt-nut butter mixture into each mold or liner, pressing down slightly to pack it in. Leave a little space at the top as the mixture may expand slightly while freezing.

Add Optional Toppings: If desired, sprinkle your chosen optional toppings (like shredded coconut, chia seeds, or dried fruit) over the top of each disk, gently pressing them in.

Freeze the Disks: Place the filled molds in the freezer and freeze for at least 3-4 hours, or until fully solid.

Remove and Store: Once frozen, carefully remove the energy disks from the molds. They can be stored in an airtight container in the freezer for up to 2 months.

Serve and Enjoy: Grab a disk whenever you need a quick energy boost! They can be enjoyed straight from the freezer or left to sit for a few minutes for easier chewing.

Prep Time: 15 minutes | Total Time: 4+ hours | Servings: About 12 disks |
