Ingredients

2 ripe bananas, sliced

2 cups plain Greek yogurt (or dairy-free yogurt for a vegan option)

1/2 cup creamy peanut butter (or almond butter)

1 tablespoon honey or maple syrup (optional, for sweetness)

1/2 teaspoon vanilla extract

1/4 cup dark chocolate chips (or dairy-free chocolate chips)

2 tablespoons chopped nuts (e.g., almonds or peanuts)

A pinch of sea salt

Instructions

Prepare the Yogurt Mixture: In a bowl, combine the Greek yogurt, peanut butter, honey (if using), and vanilla extract. Whisk until smooth and creamy.

Line the Pan: Line a baking sheet (approximately 9x13 inches) with parchment paper, making sure the paper overhangs the edges for easy removal later.

Layer the Ingredients: Pour the yogurt-peanut butter mixture onto the parchment-lined baking sheet. Spread it out evenly with a spatula to about 1/2 inch thickness.

Add Bananas and Toppings: Evenly distribute the sliced bananas on top of the yogurt layer. Sprinkle the dark chocolate chips, chopped nuts, and a pinch of sea salt over the top.

Freeze: Place the baking sheet in the freezer and let it freeze for at least 4 hours, or until completely firm.

Cut and Serve: Once the bark is frozen, remove it from the freezer. Use the overhanging parchment paper to lift it out and onto a cutting board. Cut into pieces (your desired size works well!) and enjoy.

Store Remaining Bark: Keep any leftover bark in an airtight container in the freezer for up to 2 weeks for a cool treat anytime!
