Ingredients

1 cup creamy peanut butter

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey (or maple syrup for vegan option)

1 teaspoon vanilla extract

1/2 cup mini chocolate chips

1/4 cup crushed nuts (almonds, walnuts, or peanuts)

Pinch of sea salt

Optional: 1/4 cup coconut flakes for topping

Instructions

In a mixing bowl, combine the creamy peanut butter, Greek yogurt, honey, vanilla extract, and a pinch of sea salt. Mix until the mixture is well combined and smooth.

Gently fold in the mini chocolate chips and crushed nuts, ensuring they are evenly distributed throughout the mixture.

Line a baking sheet with parchment paper to prevent sticking.

Using a small scoop or tablespoon, drop spoonfuls of the peanut butter yogurt mixture onto the parchment-lined baking sheet. You can shape them into rounded bites or squares as desired.

If using, sprinkle coconut flakes over the top of each bite for added flavor and texture.

Place the baking sheet in the freezer and freeze for about 2 hours, or until the bites are solid.

Once frozen, transfer the bites into an airtight container or resealable bag for easy storage. They can be kept frozen for up to a month.

When ready to enjoy, simply remove the desired amount of bites from the freezer and let sit for a couple of minutes to soften slightly before indulging.
