Ingredients

2 cups fresh strawberries, hulled and sliced

2 ripe kiwis, peeled and diced

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey (or maple syrup, for vegan option)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Optional: Chopped nuts or granola for added texture

Instructions

Prepare the Strawberry Mixture:

    - In a blender or food processor, combine the sliced strawberries, honey, lemon juice, and a pinch of salt. Blend until smooth. If you prefer some texture, set aside a few strawberry slices to fold in later.

      Prepare the Kiwi Mixture:

        - In the same blender (no need to rinse), add the diced kiwis, Greek yogurt, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

          Layer the Pops:

            - Grab a popsicle mold and start by pouring a layer of the strawberry mixture into the bottom of each cavity (about 1/3 full). If you reserved pieces of strawberry, drop them in now for added texture.

              - Next, layer the kiwi mixture over the strawberry layer until the mold is nearly full. You can alternate layers for a beautiful marbled effect if desired.

                Insert Sticks:

                  - Place the popsicle sticks into the center of each mold, making sure they are secure. If you're using a mold without built-in sticks, you might need to let the pops freeze for about 30 minutes before inserting.

                    Freeze:

                      - Carefully place the filled molds in the freezer. Allow them to freeze for at least 4-6 hours, or until fully solid.

                        Unmold the Pops:

                          - To release the pops, run warm water over the outside of the molds for a few seconds. Gently pull each pop out of its mold.

                            Serve and Enjoy:

                              - If desired, roll the pops in chopped nuts or granola for added crunch. Serve immediately or store the pops in an airtight container in the freezer for up to 2 weeks.

Prep Time: 15 minutes | Total Time: 6 hours | Servings: 6 pops
