Ingredients

1 cup Medjool dates, pitted and chopped

1 cup rolled oats

½ cup almonds, toasted and roughly chopped

1 cup plain Greek yogurt (or any yogurt of choice)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

½ teaspoon cinnamon

Pinch of salt

½ cup dark chocolate chips (optional for drizzling)

Fresh fruit for garnish (optional)

Instructions

Prepare the Base:

    - In a food processor, combine the chopped Medjool dates, rolled oats, toasted almonds, cinnamon, and a pinch of salt. Pulse until the mixture reaches a sticky, crumbly texture.

      Create the Crust:

        - Line an 8x8 inch baking dish with parchment paper, allowing some overhang to make it easy to lift out later. Press the date-oat mixture firmly into the bottom of the prepared baking dish to form an even layer. Use the back of a spoon or your hands to compact it tightly.

          Mix the Yogurt Layer:

            - In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well combined and smooth.

              Assemble the Bars:

                - Pour the yogurt mixture over the pressed crust, smoothing it out with a spatula to create an even layer.

                  Freeze:

                    - Cover the baking dish with plastic wrap and place it in the freezer for at least 4 hours, or until the yogurt is completely set.

                      Prepare for Serving:

                        - Once the bars are firm, remove them from the freezer. Lift the entire block out using the parchment paper overhang. Cut into bars or squares as desired.

                          Optional Chocolate Drizzle:

                            - If you're adding a chocolate drizzle, melt dark chocolate chips in a microwave-safe bowl in 15-second increments, stirring in between until smooth. Drizzle over the bars once cut, and you can also sprinkle with extra toasted almonds for garnish.

                              Serve:

                                - Enjoy your delicious Frozen Yogurt Toasted Almond Date Bars right away, or store them in an airtight container in the freezer for up to two weeks.
