Ingredients

1 lb sirloin steak, cut into 1-inch cubes

3 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped (plus more for garnish)

½ teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

1 tablespoon olive oil

Juice of ½ lemon (for brightness)

Instructions

Prep the Steak: Start by patting the steak cubes dry with paper towels to ensure a great sear. Season generously with salt and pepper.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until it shimmers. This will help create a beautiful sear on the steak.

Sear the Steak: Add the cubed steak to the pan in a single layer (you may need to do this in batches to avoid overcrowding). Sear for about 3-4 minutes on each side, or until a golden crust forms and the steak is cooked to your desired doneness (medium rare is recommended).

Make the Garlic Butter: Once your steak bites are done, reduce the heat to medium and push the steak to one side of the skillet. In the empty space, add the butter, minced garlic, and red pepper flakes (if using). Stir continuously for about 1-2 minutes, allowing the garlic to turn fragrant but not browned.

Combine and Toss: Mix the steak bites with the garlic butter, ensuring they are well-coated. Squeeze the lemon juice over the top and sprinkle with fresh parsley. Toss everything together to combine flavors.

Serve: Remove from heat and serve immediately. Garnish with additional parsley if desired. Enjoy these delectable bites as an appetizer or over rice for a delightful meal.
