12 oz rigatoni pasta

1 lb sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 teaspoon Italian seasoning

Salt & pepper to taste

½ cup grated Parmesan cheese, plus more for serving

2 tablespoons fresh parsley, chopped

2 cups baby spinach (optional)

Zest of 1 lemon (for garnish)

Cook the Rigatoni: In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

    Sear the Steak: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Season the steak pieces with salt, pepper, and Italian seasoning. Add the steak to the skillet in a single layer (you may need to do this in batches) and sear for about 3-4 minutes until browned. Remove the steak from the skillet and set it aside.

      Prepare the Garlic Butter: In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Add the minced garlic and red pepper flakes (if using) and sauté for about 1-2 minutes, until fragrant but not browned.

        Combine: Return the steak to the skillet, along with the cooked rigatoni and baby spinach (if using). Toss everything together, allowing the spinach to wilt and the steak to heat through. If the mixture seems dry, add a splash of the reserved pasta water to reach your desired consistency.

          Finish with Cheese: Remove from heat and stir in the grated Parmesan cheese, mixing until melted and combined. Taste and adjust seasoning with salt and pepper.
